Wine & Cheese Evening
Serve the following combinations on crackers of your choice, I prefer Carr's Water Crackers or melts, but Aldi do a nice savoury cracker too! Of course the Italian crackers and breadsticks are fabulously indulgant - Lay out a cheeseboard, and dress your crackers with different cheese - or just leave your guests to it. Place ramekin dishes or jars of your jellies & chutneys on the board and let the fun begin!
Soft / Cream Cheese ; Port salut, Goats Cheese, Cream Cheese - Philadelpha, Brie - Wicklow Baun - serve with Red Onion Marmalade with wine and port, Beetroot Chutney, Ciara's sweet pickles, Balsamic Jelly, Piquant Chilli Jelly, Jalapeno Jelly
Cheddar Cheese; serve with Rhubarb Relish, Beetroot Chutney, Red Onion Marmalade
Cream Cheeses, Philadelphia, Port Salut - any savoury jelly - Balsamic Jelly, Piquant Chilli, Jalapeno, Lemon & Ginger, Raspberry, Red Onion Marmalade with Wine & Port, Beetroot Chutney, Ciara's Sweet Pickles
Now simply pour the wine and relax. I promise you a most enjoyable evening with friends

Party time Canapes
Fan tailed prawns with sweet chilli dipping Sauce
Goats cheese and Red onion mini tarlets
Goats cheese fritters served with beetroot chutney / red onion marmalade
Butterfly prawns with sweet chilli dipping sauce, piquant chilli jelly
Pate on melba toast triangles, with a quiver of jelly
Popadoms / toasted pitta with greek yogurt mixed through with beetroot chutney
Vol au vonts filled with cream cheese, and topped with a savoury jelly or chutney of your choice - piquant chilli, rhubarb relish .. list goes on
Seaweed sheets (nori) filled with cream cheese mixed with savoury jelly and smoked salmon - chill and slice
French stick slices - brushed with oil and baked, then topped with cheese, chicken, roast beef - jelly of your choice
Puff pastry sausage rolls filled with sausage meat mixed through with a savoury jelly or chilli dipping sauce. Must be tasted to be believed! Try it
Savoury crackers and cheese with a choice of chutneys or savoury jellies - eg port salut with beetroot chutney, cheddar with rhubarb relish, philadelphia cream cheese with piquant chilli jelly Cocktail sausages with Earl grey tea jelly

Vol au vonts, filled with cream cheese and topped with ciaras sweet pickles

Mini tartlets, baked blind and filled with any Lemon or Lime Curd...can even be topped with meringue and baked in oven

Mini cheesecakes, made by putting crushed biscuit and butter mix in muffin case, and fill with cream cheese mixed through with a curd or even a jelly and some whipped cream. Chill and serve

 

Entrees
Goats cheese and Red onion mini tarlets
Avodada or melon with salad and and fruity dressing - blackcurrant will be just right
Deep fried chicken wings, tossed in salt and butter, and drizzled with raspberry vinegar
French stick slices, oiled, baked and topped with meat, cheese and jelly of your choice, served with salad
Deep Fried Brie with Red Onion Marmalade (or raspberry jelly jus)
Filo Pastry sheets, brushed with clarified butter and filled with any cream cheese and red onion marmalade with port and wine, or beetroot chutney.... scrunched into a parcel and baked until golden brown....gorgeously simple
Deep fried mushrooms / courgettes, in crispy batter with savoury jellies
Portabello mushrooms layered with balsamic jelly and topped with cream cheese, baked in the oven

Chicken liver Pate served with Melba toast and raspberry or redcurrant Jelly
Black pudding, pan fried, topped with "Wicklow Baun" Cheese and flashed under the grill, served on a bed of Red Onion Marmalade with Port and Red Wine.....Or !!! ..... Black Pudding salad and add some sweet chilli dipping sauce to your mayonaise
Duck liver pate served with blackcurrant jelly
Cucumber cups filled with smoked salmon mixed through cream cheese and topped with balsamic jelly / piquant chilli

Glazed Chicken salad - steamed chicken breasts, finished with glaze of savoury jelly (balsamic, lemon and ginger, piquant chilli) and served on top of a bed of salad
Spicy chicken wings / drum sticks with piquant chilli jelly
Duck stirfied with blackcurrant jelly and served on a bed of salad

Main Courses
Oven Roast duck with Blackcurrant jelly jus
Chicken breasts with a piquant raspberry sauce
Burgers, Pork Chops topped with Ciara's Sweet Pickles
Chicken breasts glazed with savoury jellies (herb, piquant chilli, lemon & ginger, balsamic) and roasted in oven
Stir fried chicken with savoury jellies
Chicken stuffed with cream cheese and piquant chilli jelly, and glazed on top

Red cabbage braised in red wine vinegar and tossed in crab apple, apple jelly with chilli
Roast vegetables tossed in balsamic jelly

Peppers halved and topped with cream cheese and savoury jelly of your choice - piquant chilli
Portabello mushrooms layered with balsamic jelly and topped with cream cheese, baked in the oven

Haloumi Cheese, lightly fried in Olive oil or butter and served with any savoury jelly, Beetroot Chutney or Red Onion Marmalade
Spinach served with feta cheese and piquant chilli jelly
Potato and beetroot relish au gratin
Baked potato with soured cream and balsamic jelly
Potato wedges with savoury jelly
Deep fried mushrooms / courgettes, in crispy batter with savoury jellies

Desserts
Bread and butter pudding baked in individual ramekins and served with blackcurrant jelly
Icecream served with a quiver of sweet jelly
Pablova - quivers of jelly under the cream and topped with fresh fruit - fruit explosion!
Crepes served with sweet jelly jus
Chocolate mousse with raspberry jelly
Chocolate cake with raspberry jelly
Victoria sponge layered with blackcurrant / raspberry jelly
Cheesecake with sweet jelly
Roulades with jelly, fresh fruit and cream
Meringue nests served with cream, fresh fruit and quiver of jelly
Fruit Fritters with jelly
Fresh Fruit Salad with Cream and a quiver of jelly
Summer fruit pudding with blackcurrant jus

Mini tartlets, shortcrust pastry baked blind and filled with any sweet jelly or lemon or lime curd..could also be topped with icecream and meringue mix and quickly flashed in the oven for mini baked alaskas!!

Cheesecake made with cream cheese, whipped cream and any curd or sweet jelly mixed through (lime curd is fabulous on gingernut base)

Recipe suggestion: Bread and Butter Pudding served with Blackcurrant Jelly

Ingredients:

  • 8 Slices stale white bread buttered, cut 4 pieces
  • 75g raisins soaked in 100mls boiling water and juice of one orange with 1/2 zest
  • 250g milk
  • 100mls cream
  • 70g castor sugar
  • 3 eggs
  • 1/2 tsp nutmeg or cinnamon
  • 4tbsp Blackcurrant Jelly mixed with 2tbsp boiling water

Layer bread triangles in a buttered ceramic dish, sprinkling intermittently with soaked raisins. Beat milk, cream, castor sugar and egg in a jug with a whisk and pour over bread mixture. Sprinkle with spice and bake at 1800C for 30 to 40 minutes until golden brown. Serve with Blackcurrant Jelly or sauce on the side.


 

Recipe suggestion: Pork with Sweet Chilli Sauce.
Piquant chilli jelly with subtle undertones of ginger and garlic enhances but does not overpower foods. Superb with roast lamb, gammon or pork; It is especially nice with chicken dishes. Add it to stir fries for a delicious kick!
 
For total indulgence, drop a spoon of Chilli Jelly on a cracker with cream cheese. Grill some salmon or pork with a dollop on top. Use as a dipping sauce for prawns or serve on the side with brie and pâté. Just add one tablespoon of jelly per two tablespoons of water. Add a dash of white wine vinegar to taste. Simmer to sauce consistency and pour to the side. Delicious!
 
Ingredients:
  • 2 tbsp Chilli Jelly
  • 2 tbsp Cider Vinegar
  • One tbsp soy sauce
  • Juice of one orange
  • One clove garlic
  • 1/2 tsp wholegrain mustard
  • Season with salt and black pepper
  • 1/2 spoon wholegrain mustard (optional)

Add above ingredients to your roasting dish or frying pan after you remove your meat and reduce to sauce consistency.

Pour over pork medallions when serving.


 

 

Recipe suggestion: Goats' Cheese & Beetroot Tart
 
Ingredients:
  • One packet puff pastry
  • One jar beetroot chutney
  • 2 red onions, finely sliced
  • Sprig Rosemary, chopped
  • 250g goats' cheese
  • Seasoning 
 
Roll out pastry and place in greased dish. Prick and bake blind for 15 mins at 1900C. Flatten if risen in middle. Fry onions in oil and sweat until soft. Add chopped rosemary and spread over pastry. Top with Beetroot Chutney. Crumble goats' cheese on top, season with salt and black pepper and drizzle with olive oil. Bake at 2000C until cheese is golden. Three minutes before the end, top with a handful of hazelnuts to toast. Serve with fresh salad.
